A great go-to.
A puff pastry roll kept in the fridge is a great go-to ingredient when you need fast dinner ideas.
Unroll it and top it with a few simple ingredients that pack a punch, and in very little time you can have a delicious pizza-like creation hot on the table and pleasing a hungry crowd.
For two as a main
- 1 roll of ready rolled puff pasty, left out of the fridge but still wrapped for 20 minutes before cooking
- A couple of handfuls of different tomatoes, sliced
- 1/2 tsp fresh thyme tips
- A few tablespoons of Dijon mustard
- 100g taleggio cheese in chunks
- Sea salt and black pepper
- Olive oil to serve
Method
- Preheat the oven to 200°C (fan oven).
- Line a baking sheet with baking paper and roll the pastry out on to it. Cut the corners in to rounds if you like (as I have) or leave as a square — it all tastes the same after all! Prick with a fork all over (not the very edges) and place in to the oven for 10 minutes.
- Remove and leave to cool for a minute or two, then brush the base with the dijon mustard, leaving around 1 cm at the edge untouched.
- Lay the tomatoes and cheese over the top and give a generous grind of black pepper, a little scrunch of salt and sprinkling of the thyme tips.
- Place in to the oven for 15 to 20 minutes or until the pastry is crispy golden brown and the cheese golden and bubbling.
