High on protein, light on carbs.
As you can probably tell from my twitter feed and recipes, I’m not a member of the no carb crew. In fact, after reading recently that our brains can’t produce serotonin without them, I tucked in to a loaf of bread with abandon and rejoiced that carbs it seems, do actually make you happy.
But as much as I love noodles, pasta, rice and pulses, I prefer variety and the light feeling I get from taking good care of my body on the food front, and so going carb light from time to time I find for me is a good thing.
These rolls are a great way to get a hand held snack that's carb free and protein rich. Your favourites sliced meats are laid on top of each other (no more than 3 at a time or the rolls are too big to scoff) separated by a thin layer of skinny cream cheese and filled with some of your favourite herbs or leaves and tightly rolled.
They’re as flexible as they are tasty, and you can fill them with all kinds of fridge bits... slaw is great, as are griddled peppers, artichoke hearts, rocket, olives or sun-dried tomatoes, and it goes without saying that grated cheese works well too. After all, it's essentially a sandwich minus the bread, so anything goes.
Ham ideas as I used here:
- Wafter thin chicken with mortadella and thin cut Yorkshire ham
- Smoked ham with prosciutto and speck
- Thin cut Yorkshire ham with smoked ham and speck
Method
- Depending on the size of your hams, you may need to lay 2 together, slightly overlapping and joined with cream cheese.
- On top of each ham layer spread a very thin layer of cream cheese, making sure it gets right to the edges. Once you have 3 layers on top of each other, at one end add your herbs or leaves (I used sorrel) as you would if you were making a wrap, and roll it up tightly. Repeat and eat.
