The real amber nectar.
I don’t know who invented iced tea, but they need some sort of commendation. Easy to make and even easier to guzzle, it’s my go-to summertime tipple whether at home or on holiday, as I am now.
It’s perfect drunk over ice with some fresh mint for extra zing, but it’s also good to know it freezes well — making delicious ice lollies for when it’s super hot out.
No fear of that in England right now though apparently. I’ve got chills to look forward to when I return home to Blighty. Best get glugging this amber nectar by the poolside to top up my summer reserves while I can. Now, where’s that suncream...
Easy iced tea
- Rind of 1 unwaxed lemon
- Juice of 2 juicy lemons
- 4 tbsp white sugar
- 1L boiling water
- 2 tea bags
Method
- In to a large jug that will take the boiling water without cracking, place all the ingredients and stir until the sugar is dissolved and the tea has coloured the brew to a shade of amber — takes about 30 seconds to 1 minute.
- Remove the teabags but leave the lemon rind in there as the jug cools down.
- Once cool place in the fridge to chill, drink over ice and with fresh lemon wedges and mint.
